Gimmy, what does regionality mean to you in summer cooking?
“For me, regionality means cooking with what grows and lives around us, in the truest sense of the word. Some of our vegetables come from a small shop in the region that is run by prisoners, so we combine quality with social commitment. We also harvest from our own garden and work with regional producers. I am inspired by what is in season and use modern techniques to bring a fresh twist to traditional ingredients. This is how down-to-earthness becomes contemporary enjoyment.”
A summer favorite with depth
Which dish on the menu is your personal favorite?
“My favorite is the beetroot risotto with lemon and herb crumble and eggplant marinated in oil. Why? Because it combines everything I love about summer cuisine: the beetroot adds a sweet, earthy note, the crumble provides freshness and crunch, and the eggplant adds depth and heartiness. The whole dish is vegetarian and can even be made vegan on request. For me, this dish shows how much character and flavor regional vegetables can have when prepared with creativity and sensitivity.”
More than satisfied – a feeling of summer
What do you want our guests to experience when they try your summer dishes?
“I want them to feel a piece of summer when they eat. That lightness when the sun is on your skin and you just enjoy the moment. Our dishes should not only taste good, but also tell a story: about honest ingredients, respect for nature, and a genuine love of cooking. When our guests go home after their meal with a smile and a feeling that it was something special, then we have done everything right.”
