Wine & Dine at s’nani

On September 10, s’nani will host an evening dedicated entirely to cheese, wine, and the people behind them. For our Wine & Dine event, regional partners will come together around one table: s’nani, the Vals Alpine Dairy, and the Liesch Winery.

The Vals Alpine Dairy is already joining us with its cheese specialties, which will feature in various courses of our menu that evening. From the cheese course to our homemade raviuls to the veal cordon bleu, our kitchen team will demonstrate just how versatile cheese can be.

The Liesch Winery will provide the perfect wine pairings. A wine has been selected for each course to complement its respective flavors—from Chardonnay as an aperitif to Rhine Riesling for a sweet finish.

Wine from the Bündner Herrschaft

Liesch Weine

The Liesch Weine family winery is located in Malans, in the heart of the Bündner Herrschaft region. Various grape varieties grow on 6.7 hectares surrounding the winery, primarily Pinot Noir, but also Riesling, Silvaner, Chardonnay, and Rheinriesling. The wines have been pressed directly on the estate since 1984. Today, Liesch stands for regional viticulture meeting Bio-Suisse standards and the natural cultivation of its own vineyards.

Behind the winery lies a family business with a rich history. Over many years, Ueli and Jürg Liesch have shaped the business.

That’s why, at our Wine & Dine event, Liesch does more than just provide the wine pairings. A wine has been selected for each course to complement the dish. So on this evening, another piece of Graubünden finds its way into your glass.

From the Valser Käsekessei to s’nani

Sennerei Vals

At an elevation of 1,252 meters, in the heart of the Grisons mountain village of Vals, the Sennerei Vals produces its cheese. The milk used comes directly from the valley: Nine organic farms are members of the Sennerei cooperative and deliver their mountain milk to the village dairy, where it is transformed into various dairy and cheese specialties.

Production takes place on-site with a strong connection to the region. The product range includes, among other things, mild and tangy Valser BIO mountain cheese, raw milk cheese, Mutschli, Camembert, and other dairy products made from Vals mountain milk. Since 2024, master cheesemaker Roberto Pedroni has been managing the day-to-day operations of the dairy.

At the Wine & Dine event on September 10, cheese from Vals will therefore feature on the plate in a variety of ways—from cheese platters to our Zwibla Chäs Raviuls and veal cordon bleu.

At s’nani, it’s not just about serving regional products. We want to show who’s behind them, where they come from, and what you can make with them. That’s exactly why our Wine & Dine event is such a perfect fit for us.

With the Vals Alpine Dairy and the Liesch Winery, we’ve brought together two partners who, like us, have close ties to Graubünden. Cheese made from Vals mountain milk pairs with wine from the Bündner Herrschaft region and dishes that our kitchen team reimagines in its own unique way.

The evening thus brings together many of the things s’nani stands for: regional producers, short supply chains, authentic products, and familiar flavors presented in a new light. And the best part: behind every cheese, every wine, and every dish is someone from the region waiting to be discovered.
